Salads? I just love them. I eat at least one every day. Most times I make them in such a way that they can be served as a proper meal. Easy to prepare in advance and incredibly portable (and healthy of course) a salad is the best option for my lunch break at work.
It was just a couple of months ago, that I ate endives for the first time. A Belgian friend introduced me to this lettuce-like vegetable that belongs to the chicory family and has this unique, slightly bitter taste. She even prepared for me one of the most popular Belgian dishes; endive ham au gratin.
In Greece, vegetables such as eggplants, zucchini and peppers are at their peak during the summer months. These vegetables usually served fried, accompanied by tzatziki or some other Greek spread. But! I prefer my vegetables grilled, tender and juicy, topped with a bit of crumbled Feta or Katiki cheese.
I eat salad every day. Sometimes as a side dish, sometimes as a main dish. Salads are healthy, nutritious and easy to make. Especially during the warm months, a refreshing, cool salad that requires no cooking sounds like the ideal summer meal.
